Great Start

This week is off to a great start {yes I realize it's only Tuesday and yesterday was a holiday}.

It feels amazing to start a week well rested and organized for a new week.

Lunches made.
I have come to a realization that lunches have to be made before the week starts.
This week for lunch:
Fat free strawberry yogurt with kashi granola
Carrots & cucumbers
Hard-boiled egg {egg white only} ~ for an afternoon snack

Snacks before working out:
Apples with peanut butter

I decided that once a week I will make a new recipe from pinterest & here is this weeks.
TURNED OUT SO GOOD and was so easy to whip together.
I doubled the recipe so that we will have leftovers for the week & served it over brown rice.





Like I said, this week is off to a great start.
And to top it off, we made it to the gym tonight for an 90 minute workout.

Here's to the rest of this week being just as great as today.

new year plans & goals {just a bit late}

As I continue to reflect on another year that has slipped by so quickly, I am reminded by all the wonderful memories that were made.

Just a few of the amazing events & memories from 2012. I can't wait to see what 2013 has in store.

Goals for 2013 -
1.) Finding a balance.
I am in need of finding a balance between work and home. My plan for this school year was to not bring any school work home {which lasted about one day}. I need to find a better way to keep work at work and home at home. I need to find other things to do at night besides stress about getting papers graded or assignments created.
2.) Healthy Life.
This ties in directly to #1. I need to get back into my old routine of working out. I use to workout 4-5 mornings a week at 5:00 am before work. IT WAS AMAZING. However, it seems that I cannot get my body out of bed when the alarm goes off. And if I save my workout for after work, I am juggling work, meetings, classes, and exhaustion. This also relates to no more chicken McNuggets for dinner and planning ahead to have dinner groceries in the house and dinners planned.
3.) Organizing & Simplifying Life.
As we look at moving again {the 4th time since 2008}, I want to have everything organized. And also simplified. I recently donated boxes {like 4} to the women's shelter in town and still have an overflowing tub to drop off. I am sick of the clutter and am working toward creating better systems before we move again.

Time to start working on #3 now. Laundry and kitchen are calling my name {very loudly}.
